

If you’re anything like me, you love to host parties, but always seem to be short on time when it comes time to prep for them. It never fails — time always seems to creep up on me! That’s why I’m always looking for simple ways to create festive themed events. In particular, I was looking for a festive way to create some Oscar Party treats. The following decorations caught my eye, and also provided the perfect opportunity to utilize my Paleo Banana Bread recipe.

When it comes to Oscar Party ideas, I can’t resist these gold and silver glitter star cupcake toppers. They are the perfect touch to add to your Oscar Party treats (they are also great for New Year’s Eve parties!). I happen to be making a batch of banana bread muffins, so I decided to pair them with the festive toppers and cute black and white chevron baking cups to play up a black, white, gold, and silver Oscar party theme. I chose to use Paleo Banana Bread Muffins as my Oscar party treat because they’re just so easy to make. (although frosted cupcakes would look so so pretty too!). If you’re looking for a quick and easy grain-free, dairy-free, nut-free, and refined sugar-free recipe, these muffins (adapted from my Paleo Banana Bread recipe) are a tasty option:

- ½ cup plus 1 Tbsp organic coconut flour
- 1 tsp baking soda
- 3 pasture-raised eggs (preferably room temperature)
- ⅓ cup unrefined virgin coconut oil or grass-fed, butter melted (use oil for dairy-free version)
- ¼ cup pure and/or raw honey
- 1 tsp pure vanilla extract
- 2 tsp raw apple cider vinegar
- 4 medium very ripe bananas, mashed
- ½ cup allergen-free chocolate chips (optional; Equal Exchange are organic, fair-trade and dairy and soy free; *note: they are sweetened with organic raw cane sugar)

Preheat oven to 325 degrees F. Line a muffin pan with 12 liners.

Mix eggs, oil, honey, vanilla extract, and apple cider vinegar in a medium bowl. Fold in coconut flour and baking soda and mix thoroughly (an electric mixer or power blender will produce the best results). Add in mashed bananas and mix well. (If using a power blender, briefly pulse eggs, eggs, oil, honey, vanilla extract, apple cider vinegar and whole bananas. Add coconut flour and baking soda and mix thoroughly.)

If using chocolate chips, fold them into your batter. Scoop batter into lined muffin cups, about ¾ of the way full (I like using this scoop). This recipe will produce about one dozen standard-sized muffins.

Bake at 325 degrees for 35-45 minutes, until the tops are golden brown and an inserted toothpick comes out clean. Let cool and enjoy!

Store in an airtight container in the refrigerator (I actually enjoy this banana bread recipe even more once it’s been chilled!).
